Late-Night Liberty: Mac and Cheese Edition

The kids love mac and cheese and often feast on Annie's organic pasta. Sometimes -- okay, oftentimes -- I steam some broccoli and call it a meal.

Also, oftentimes, I eat it with them. Perhaps it's the marketing, but I feel funny since it feels like I am eating the kids' food. I am tempted to make a more adult-friendly and savory version of this American staple and was wondering if you had any recipes to share? Here is one I found online:

Sage Baked Macaroni and Cheese
1 pound(s) ditalini pasta
1 3/4 cup(s) half-and-half
3/4 cup(s) whole milk
8 ounce(s) cream cheese
3 tablespoon(s) unsalted butter
2 cup(s) (about 10 ounce) grated provolone cheese
1 3/4 cup(s) (about 5 ounces) coarsely grated Parmesan cheese
2 ounce(s) (about 1/2 cup) prosciutto, coarsely chopped
1 tablespoon(s) minced fresh sage
1 teaspoon(s) fresh-ground pepper
1/2 teaspoon(s) salt

Make the sauce: Preheat oven to 350 degrees F. Cook the pasta following package directions. Strain the pasta, rinse with cold water to cool, drain well, and transfer to a large bowl. Set aside. Combine the half-and-half, milk, cream cheese, and butter in a medium saucepan. Cook over medium heat, stirring occasionally, until the butter and cream cheese have melted — about 10 minutes.

Assemble the macaroni and cheese: Toss the provolone, 1 1/2 cups Parmesan, prosciutto, sage, pepper, and salt with the reserved pasta. Add the hot milk mixture and stir until well combined. Evenly divide the macaroni mixture among 8 four-ounce ramekins. Place the filled cups on a baking sheet and sprinkle the remaining 1/4 cup of Parmesan cheese evenly over the tops. Bake until the macaroni is set and the tops are golden brown — about 25 minutes. Serve hot in ramekins.

Then again, my ready-made Annie's is so much quicker! But this sounds delish. What other quick and yummy pasta dishes do you have to share?

A recent study found that all Americans will be fat in 2048. Also expected to balloon are healthcare costs directly related to excess pounds, which will double each decade, reaching $957 billion in 2030 — accounting for one of every six healthcare dollars spent in the U.S.

A team in the University of Warwick believe that eating broccoli could reverse the damage caused by diabetes to heart blood vessels. The key is said to be a compound found in the vegetable, called sulforaphane, which encourages production of enzymes which protect the blood vessels. So, we should definately add more broccoli to our diet, or as my daughter used to call it, little trees.

What makes men cry? Some of the ten reasons mentioned ranged from "making parents proud" to "tears? What tears? It's just dust in my eyes."
