I always loved the Friday after Thanksgiving because it was just one big smorgasbord in our house. Mom was done with the cooking for the weekend (except for the turkey soup on Sunday), so we had total pick-and-choose rights. Turkey skin, with a side of pumpkin pie and whipped cream for breakfast? Who cares!

is toasted white bread [we use a bit of white bread in our dressing - aka stuffing], turkey, dressing and cranberry sauce. YUM!
and the sandwich chain Which Wich has a sandwich called the "thank you turkey" which is basically the sandwich I described above.

dressing/stuffing split personality. I save the bread heels from loaves of bread in a gallon ziploc and throw them in the freezer just so I have a good excuse to make some! Yum! I also throw in leftover cornbread...on the rare occasion when there is leftover cornbread.

My family has been known to have heated debates over a "proper" turkey sandwich. And heaven help the person who cuts in line to snag the last of the dressing!

and if you like, you can make the Libby recipe with lowfat or nonfat evaporated milk and cut the sugar back a little, and it's still terrific. Leave off the whipped cream and I say you have breakfast.
You can make it without a crust and it still works. Or, I have a really nice crust recipe that is a cookie-like crust and uses whole wheat flour, ground almonds, and oats, and is easier and healthier than a traditional pastry crust.
Oh, and I have to share a day eating with a pregnant friend. When you're going to a restaurant that's known for the pies, why stuff yourself first with their mediocre meal? Just have pie first, with some salad to fill you up after. :-)
