  • Hey... (0 / 0)

Pumpkin pie is breakfast food. Period. It's got a vegetable, cream, eggs, and pastry. Sounds like breakfast to me!

    • All year round (0 / 0)

I'm probably fooling myself, but I see pumpkin pie as pretty healthy - it's a super food right? I could eat pumpkin pie year round - and you're right - it is the best for breakfast. With a glass of ice cold milk! mmmmmm

      • I agree, actually (0 / 0)

and if you like, you can make the Libby recipe with lowfat or nonfat evaporated milk and cut the sugar back a little, and it's still terrific. Leave off the whipped cream and I say you have breakfast.

You can make it without a crust and it still works. Or, I have a really nice crust recipe that is a cookie-like crust and uses whole wheat flour, ground almonds, and oats, and is easier and healthier than a traditional pastry crust.

Oh, and I have to share a day eating with a pregnant friend. When you're going to a restaurant that's known for the pies, why stuff yourself first with their mediocre meal? Just have pie first, with some salad to fill you up after. :-)

Pie First, our new rallying cry!

I don't think we would've had the guts to do it if she hadn't been pregnant. :-)
