at chez Hillary. This is a nearly weekly affair that is totally meatless.
I sautee up a bag of Morningstar Farms veggie Griller crumbles with some taco seasoning, make fresh guacamole (oh man the avocados were PERFECT tonight), warm up some fat free refried beans, soft whole wheat tortillas, a little shredded cheese and (if it's not discovered to have molded over as it was tonight) salsa.
In the summertime, I will make my own pico de gallo with fresh tomatoes, and we will sometimes grill some chicken marinated in fajita seasonings of my own devising instead of the veggie crumbles.
The kids love assembling their own thing and Eli basically gets all the vegetables and beans he will eat for the week in this one meal. The husband usually eats two or three fat tacos and the boys generally eat one or one and a half.
Tonight the boys all had this and I had an omelette with spinach, fat-free cheese and guacamole.

I am making homemade pizza for myself and another family. I make a kids pizza (just cheese) and the grownups get "pepperoni" and mushrooms. I never tell people its turkeyroni and no one has spotted it yet. We also make a giant salad to go with it.
I like a lot of those Morning Star products flavor-wise. They have a great "sausage" that I serve with my pumpkin soup in the winter. And what's with the moldy salsa?! First time EVER that happened to me was last week! Is it a bad year for tomatoes?

I make a whole wheat crust, and I give DD a hunk of dough to make her own pizza. She likes hers with cheese and mushrooms. I make the big one with cheese, basil, and garlic, and then add some mushrooms on my portion.
Now that I'm good at it, I can make a pizza from start to finish in about an hour total time, faster than I can pick one up, and that's not all working time.

You got the full on grilled marinated fajitas for company variety. Tonight was just the workaday quickie meal, but the boys all seemed satisfied.

how quickly it's passed. But Jess still remembers the visit and will still occasionally ask if Eliyyyyyas can come over for a playdate. Seriously.
