you just discribed our menu this week! Roast chicken Sunday, thai green curry stir fry with chicken Tuesday with leftovers on Thursday, and carcass into the stock pot on Wednesday for a big vegetable soup (said soup has enough leftovers such that I froze three other meals for next few weeks).

is how our grandparents ate. Sunday roast chickens, hams, pot roast, etc. then the leftovers for a few days after that. My friend (whose Dad was excommunicated from the Amish) says that is how they eat too. And if they haven't slaughtered an animal recently, they eat mostly vegetarian diets.

but certainly, it's how we ate growing up! I read food porn odes to stock and just have to laugh - it's not a fancy, high-falutin' wonder elixer; it's what you do when you got lots of bones and shreds of meat and you gotta extract all the benefits!

is Thanksgiving, because it is a leftovers fiesta! And turkey stock is soooooooo goooooood! We had a really fun party 4 years ago with friends who invited everyone over the day after Thanksgiving for leftover potluck.
That was the day I learned that "noodle kugel" was the Thanksgiving food of the Jews. At least according to our friends the Katzes. We also had (among other things) fried plantains, macaroni and cheese, and my contribution of banana bread. It was eclectic and immense.

I always loved the Friday after Thanksgiving because it was just one big smorgasbord in our house. Mom was done with the cooking for the weekend (except for the turkey soup on Sunday), so we had total pick-and-choose rights. Turkey skin, with a side of pumpkin pie and whipped cream for breakfast? Who cares!

is toasted white bread [we use a bit of white bread in our dressing - aka stuffing], turkey, dressing and cranberry sauce. YUM!
and the sandwich chain Which Wich has a sandwich called the "thank you turkey" which is basically the sandwich I described above.

dressing/stuffing split personality. I save the bread heels from loaves of bread in a gallon ziploc and throw them in the freezer just so I have a good excuse to make some! Yum! I also throw in leftover cornbread...on the rare occasion when there is leftover cornbread.

and if you like, you can make the Libby recipe with lowfat or nonfat evaporated milk and cut the sugar back a little, and it's still terrific. Leave off the whipped cream and I say you have breakfast.
You can make it without a crust and it still works. Or, I have a really nice crust recipe that is a cookie-like crust and uses whole wheat flour, ground almonds, and oats, and is easier and healthier than a traditional pastry crust.
Oh, and I have to share a day eating with a pregnant friend. When you're going to a restaurant that's known for the pies, why stuff yourself first with their mediocre meal? Just have pie first, with some salad to fill you up after. :-)

He was always fascinated with cars, went on Rumspringa and never came back to the fold. It was a big blow because his father had been a bishop or some sort of elder in the community. Only in the last 15 years or so I guess has he been allowed to go back and see his family.

reminded me of how different it was to feed a family in the Arizona desert with no electricity. That's one of the reasons you kept chickens - they didn't need a refrigerator, not for the meat or the eggs. And when they killed a cow, they ate nothing but beef for some time.
